Carotenoids found in fruit and vegetable pigments keep eyes healthy.
A 1995 Tufts University study showed that the carotenoids lutein and zeaxanthin are the only carotenoids found in eye tissue. Lutein in the lens may slow protein oxidation, a destructive process which can lead to cataracts.
A 1993 Harvard study showed a lower risk of age-related macular degeneration (AMD), a common cause of blindness, when people consume carotenoids.
Research consequently found that lutein could be converted by the body to zeaxanthin.
Johanna Seddon, MD at Harvard found that foods containing lutein (spinach, collard greens, mustard greens and kale) can cut your AMD risk by more than 40%.

Question: What is Kamut?

Answer: Kamut is an heirloom, non-hybrid ancient grain from the Nile region of Egypt that has never been crossbred. It has almost twice the nutrients found in any of today's standard hybrid wheat grasses.
Kamut is grown under ideal conditions on the top of a mountain, 5,500 feet high, on an ancient volcanic lake bed and harvested as shoots just before "jointing" begins. The time before jointing begins finds the shoots storing the largest amounts of nutrients. Kamut contains 29% more protein, 27% more lipids and measures higher in 8 of the 9 minerals found in common wheat. Kamut is significantly higher in Magnesium (23% higher) and Zinc (25% higher). In terms of vitamins, Kamut contains more Riboflavin, Thiamine and Niacin than common wheat and it is significantly higher in Vitamin E. Of the 18 amino acids usually found in wheat, 16 are higher in Kamut. Threonine, Cystine, Arginine, Histidine, Aspartic Acid and Serine range from 34% to 65% higher in Kamut.
