This is how insulin works:

Insulin also stimulates the storage of energy in the body by "turning on" the production of fat, glycogen (carbohydrate storage in the Liver) and protein, fat being the easiest and most prolific.
Remember that this system evolved out of a place of scarcity so what happens in today's modern world of abundance? The body has continued to adapt but not in a way that is healthful- it has been forced to switch from a place of thriving to one of survival. With the frequent consumption of processed carbohydrates, insulin and the mechanisms it controls are forced to work in a manner they were never meant to. Some of the fat is sent directly to your thighs, bottom and belly for long- term storage. The rest is made into fat particles that circulate in your blood endangering blood vessels.

But it's a mistake if you stop there. "Low-carb" diets work because they brake the negative feedback loop set up by the unnatural intake of processed carbohydrates. This is a good thing.
